Critical violations are defined as a provision of the Hygiene Requirements for Retail Establishments, Title 410 IAC 7-24, which, in the event of non-compliance, is more likely than other violations to contribute significantly to food contamination, disease or environmental health hazard. Example: Hot food is not kept at 135 ˚F or higher, cold food is not at 41 degrees or lower, or food contact surfaces are contaminated.
